  • 1 mixing bowl
  • 1 frying pan


  • 2 medium ripe bananas
  • 4 Eggs
  • 1/2 cup Almond meal


  • Mash banana with a fork
  • Whisk eggs together
  • Add banana and egg together well then add almond meal
  • Heat the frying pan. Using a non stick frying pan or a small amount of butter or oil
  • Add large spoonfuls (desired size) of pancake mix to a hot pan
  • Cook on one side until small bubbles are popping in the batter
    Turn and cook until lightly browned
  • Serve by themselves or topped with your favorite topping
